why is it that everytime i do a mockdraft and draft good batters accroding to their z score i always rank very low in batting cats and high in pitching. ive tried focusing on batters first and still. is there a setting i should adjust to help this problem

Your settings look fine, and I have the same issue at times.  The team looks nice and green until the last few picks.

Obviously, drafting hitting earlier would help the issue.  For me, I try to get 1 elite starter, 1 good starter, 1 elite closer, 1 good closer, and fill the rest with good setup guys to hold down ERA/WHIP and maybe some future saves.  I then stream starters knowing they'll hurt my ERA/WHIP. This leaves most of the top picks for hitters.  What strategy are you using?

I've tried a couple. It's a bit confusing cus it's hard to balance my early picks. I see you guys have some rp with nice scores so I try to grab one elite and next thing I know my batters are terrible compared to everyone else. How much sp and rp should I have for an 8 team league ? Maybe I'm just drafting too much pitchers

I would try waiting on the 2nd starter and 2nd closer to see how that works out. For me, the second tier closers tend to stick around a while so make sure to check ADP before drafting one.
