The lower the number, the more consistent a player is correct? Like a low number is probably a safe play and a high number is more of a boom/bust GPP play?

Yes, the lower the number, the more consistent the player total value.

Any chance you can switch the color coding so that the more consistent, lower stdev values are green and the higher stdev is red?

This might make more sense, but lower is not necessarily better since you want the players that vary on the days they're up.
