How come everytime a lineup is confirmed by a team I see that the batting lineups projections are updated, but the opposing pitchers projection stays the same. Surely the pitching projections on the site take into account the opposing lineup?!

The icon is showing when the lineup is confirmed so since the probable pitcher doesn't change, there is no icon. We will be adding a value change as part of the clock icon, and we'll also show one for the pitchers since their value does depend on the opposing lineup.

For example throughout the day as lineups are confirmed I see the timer symbol indicating batter projections changes, but nothing for pitcher projection changes...

The pitcher projections do change if the opposing lineup changes, but there's currently no clock icon for them. That will be added with a +/- value change.
