Any thoughts on updating the projections for these pitchers that are "openers"? For instance today LeClerc is starting for Texas but the majority of at bats for St. Louis will probably be versus Adrian Sampson. Not sure if projections take or can take that into account.

This will take some work since it currently uses the starter and then the remaining innings with the bullpen. Ideally each game could have a starter and then a second type of long-term reliever. Has MLB come up with a team for this 2nd pitcher yet?

Not sure. Draftkings has PO (probably opener) and PLR (Probable Long Reliever). Don't see anything like that on Fanduel.
