Confused about custom projections

I uploaded my own projections.  Take a look at Starling Marte for example

I have him projected for 7 less steals than BBM, however is SBV is .25 higher than BBM's.  Is that because I have less steals in my total projections, thus giving more weight to that category?

Yes, the value is higher because the average SB for your top players is now about 8.5 for the league, and before doing custom projections, it was 12.5.  This makes Marte's SB relative the average higher than it was before.

What defines a "top player"?  Is it the number of teams in my league x number of hitters per team?

And, can you tell me what the calculation is for the 8.5 and 12.5 you quoted.

It's odd, because the last 3 years in my league the avg was 10.5, which is right in the middle, so one set of projections is overvaluing the SB and one set is undervaluing.

Yes, the top hitterrs are those we expect to be rostered so # of teams x players per team.  The 8.5 is the average SB for your top players so your custom source is definitely lower than your past average.
